The pizza business has seen a non-traditional business model make strides over the past several years. “Fast fired” pizza restaurants have spread across the United States at an incredibly rapid pace, with Mod Pizza pioneering the concept out of Seattle in 2008.
Just in time for fall semester, Lotsa Pizza opened on Court Street to test out this concept in Athens.
Customers have the choice to order online, call in an order or go to the store. They also deliver, much like a traditional pizzeria, which caters well to the needs of college students, because sometimes the walk to Court Street simply takes more time than a student’s schedule will allow.
However, the fullest version of this experience is only achieved by going into the store. It’s most easily described as a Chipotle-esque experience, as sitting in front of the customer is an array of ingredients that add distinct flavor to each pie. The restaurant also has salads and other side items on the menu.
“[Lotsa] adds a non-traditional flair to the pizza game in town, and allows for more variety of what you can normally grab as a college student,” senior Austin Crabtree says.
Crabtree also said he “enjoyed the food” due to the freshness and integrity of ingredients, an element that customers can see right before their eyes while ordering.
